Chorizo Stuffed Breakfast Sandwich


Because Breakfast Isn't Just All About Burritos

This recipe is great if you want to make breakfast for just a couple people, or even a large group. Just increase quantity as desired. You can also get super creative like adding fresh jalapeños, tomatoes, or whatever your starving little heart desires.

4-5 large eggs whisked

1/2 of a large white onion diced

1/4 cup green onion finely sliced

1/4 cup cilantro chopped

1 avocado smashed

Chorizo (ground)

Sub sandwich rolls

Hot sauce and sour cream if desired

Salt and pepper to taste 



Step 1) Chop / slice / dice all your ingredients, and hollow out your bread. (I cut one end off about an inch in, then hollow out from there, leaving a long hollow space inside the bread.)

Step 2) In a large skillet, over medium high heat cook your chorizo until fully cooked. (I like to wait until it crisps a bit). Then remove chorizo and wipe out left over grease.

Step3) Reduce heat to medium and toss in your onions and cilantro, allow this to sauté for about a minute or two. Whisk your eggs in a separate bowl with a pinch of salt and pepper, then add to the skillet. 

Step 4) Smash avocado into a chunky paste, and spread on the bottom of the inside of the bread (seriously, go crazy with it). Drip some hot sauce down the inner walls of the bread. 

Step 5) Now that your eggs are almost done, add the chorizo and mix. Wait 1 minute and then add your cheese, continuing to scramble and mix everything together.

Step 6) Now that everything is cooked and ready to go, stuff the hell out of those bread pockets, serve with a side of sour cream.

Pro tip: I often sprinkle a little cheese on the top of the bread and throw it under the broiler until crispy right before loading them up.
