Korean BBQ Tacos


Tacos 4 Life

Taco Tuesday doesn't end on Tuesday. This recipe is simple and delicious, just fire up the grill and sear it up.




1-2 lbs flap meat

(or flank steak if flap meat is not available)

1 jar Korean bbq sauce 

(I use Bibgogo, just pick whatever is available) 

2 tbsp chili garlic sauce

2 garlic cloves diced

¼ cup cilantro for garnish

1 bag shredded cabbage mix

1 package medium soft flour tortillas

Slaw Sauce:

Juice of two limes

2 tbsp olive oil

1 ½ tbsp. sriracha

1 tsp garlic chili sauce

2 tbsp mirin (found near the soy sauce)

1 garlic clove minced


½ tsp dried ginger




Step 1) In a bowl mix together your bbq sauce , garlic, and chili garlic sauce. Reserve half for later, and pour the other half in a large zip top bag with the flap meat and marinate for 30 minutes.

Step 2) In a large bowl mix together olive oil, lime juice, sriracha, chili garlic sauce, mirin, garlic, and ginger if you opted to include it. Whisk together violently like it stole your lunch money, this will help really mix up the oil with the lime. Pour in your desired amount of cabbage (I just use the whole bag) and toss until coated evenly. (you end up with a little pool at the bottom, its good poured on rice).

Step 3) Remove meat from zip top bag and discard marinade. Grill the meat over high heat until cooked, about 3-5 minutes a side for medium. Depending on the thickness of the cut you may have to adjust heat. I like to ensure there is a nice char on each side. Use the reserved marinade for slathering each side of the meat when you flip it, if you want to get froggy and flip multiple times, just keep laying on the marinade. You will end up with a mouthwatering sticky coating of bbq goodness.

Step 4) Let the meat rest 5 minutes, then cut across the grain in small narrow 1 inch strips. Now load up your tacos, place the desired quantity of meat on a tortilla followed by the cabbage and some cilantro for garnish. Serve them up with lime wedges and a side of white rice. 

(The slaw sauce is really good on the rice as well)

Step 5) Stuff as many tacos in your face as possible, wash down with a cold beer or refreshing cocktail.... or 2… or 3.
