Smokey Santa Santa Maria Style Tri Tip


Simple, Smokey, and Sensational

Remember that one time you made the best tri tip of your life? No.?.... Well i'm from the future, grill with me if you want to live.



2-4 lb tri tip
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp coarse kosher salt
1 tbsp ground pepper
1 tbsp oregano
1 tsp rosemary
1/2 tsp dried sage
1/2 tsp cayenne powder
1 tsp chili powder
2-3 chunks smoking wood (I prefer pecan)



Step 1) Set up indirect heat on charcoal grill, you’re aiming for 350-400 degrees. So light charcoal and place on one side of the grill.

Step 2)  Once meat has come to room temp, cover in all ingredients, rubbing it in like a sensual massage, let the meat know you care. Sear meat over direct heat 1-2 minutes a side. Then place on indirect heat. Throw wood chunks directly in coals.

Step3) Let smoke. Flip/ rotate meat every 5 minutes so that the side closest to the heat changes each time. It’s usually about 20 minutes total for a 3 lb tri tip so that equals 4 flips. You’re looking for an internal temp of 135-140

Step 4) Sear each side over direct heat again for 1 minute per side. Then let meat rest on carving surface for 5-10 minutes. Carve meat and dip in juice. Enjoy!
