Salsa Verde Smothered pork burrito

Get Ready to Get Wet


As in a wet burrito, what were you thinking you pervert?



1 white onion diced

2 red tomatoes diced

1 cup cilantro chopped

2 limes halved

5-7 lb pork loin

2 containers Herdez salsa verde

½ tbsp. chili powder

1 tsp cayenne

Kosher salt

Fresh ground pepper

Shredded cheddar cheese

Black beans (canned)

Mexican rice (Rice-a-Roni or similar)

Large burrito tortillas

Sour cream and guacamolei optional



Step 1) Rub chili, cayenne, salt, and pepper on pork lion, then grill or bake at 375 until an internal temp of 145 is reached. Let her rest for 10 minutes then shred. 

Step 2) Place shredded pork in a medium sized pot with the Herdez salsa verde and let simmer for 10-15 minutes, it can sit longer if need be. Make rice and heat up beans while it simmers.

Step 3) Load up your tortilla with everything you want, I generally work in this order: cheese, rice, meat, beans, then veggies. Roll that shit nice and tight, and place on a tin foil lined baking sheet. As many as you want. Cover in cheese and more salsa verde from the pot.

Step 4) Broil until the cheese has completely melted, plate your burrito and sprinkle on some extra veggie toppings, sour cream or guacamole. A dash or two of Tapatío can’t hurt either. Serve this fat ass burrito up with a cold beer, and then go have a little siesta, you earned it.
